Finnish Potato Wedges with Salmon

Potatoes are served with many meals in Finland, but especially with salmon and other fish. Serve these wedges with salmon, halibut, or your favorite fish for a casual meal.

For the Potatoes

Ingredients
  • 2½ pounds Noblesse potatoes, cut into long wedges
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon chopped fresh thyme (or ½ teaspoon dried thyme)
Directions
  1. Preheat oven to 400°F, bring a large pot of salted water to a boil. Add the potato wedges and boil for 8 minutes.
  2. Drain the potatoes and transfer the wedges to a baking sheet, drizzle with the olive oil, salt, pepper, and fresh thyme and toss well to coat. Spread potatoes out evenly on the pan and roast for 30-40 minutes, until the potatoes are brown and crispy. Prepare the salmon while the potatoes are roasting; you can cook both in the same oven with the potatoes on the top rack and the salmon on a lower rack.
  3. Serve hot with salmon.

For the Salmon

Ingredients
  • 4 salmon fillets
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon black pepper
  • 1 teaspoon chopped fresh dill, plus more for serving Lemon wedges for serving
Directions
  1. Place salmon fillets on a sheet pan lined with tin foil. Drizzle the salmon with the olive oil and then sprinkle with salt, sugar, pepper, and dill. Bake the salmon for about 12 to 18 minutes, depending on the thickness, until firm.
  2. Garnish with additional fresh dill and lemon wedges.
