Executive Chef Frank Turchan is a master of his craft who has brought his expertise from Detroit’s top kitchens to enhance the culinary experience at the University of Michigan Dining Program, better known as M|Dining. Students, staff, and guests at catered events benefit from his skill in menu development and his creativity in designing special dining occasions. 

With a culinary arts degree from The Culinary Institute of America and training in New York, Chicago, and Detroit, he shares his knowledge through specialized training for the culinary team, one-on-one mentoring of chefs, and oversight for all M|Dining kitchens. Frank developed the internal culinary program to train his staff and foster their development. Additionally, he has successfully mentored more than 24 chefs through the American Culinary Federation (ACF) Certification. 

Frank’s experience in international and multi-concept dining has been instrumental in the design of the Central Campus Dining Center at South Quad, North Quad Dining, and East Quad Dining. He has a deep appreciation for the beauty of simple food, allowing the ingredients to shine and providing a uniquely memorable dining experience.
